Crockpot Fajitas

Crockpot Fajitas

Serves 8-10

Ingredients:
4-6 Frozen Chicken Breasts
2 1/2 cups of salsa
3/4-1 package of fajita seasoning (depending on how much flavor you want)
1 green pepper
1 red pepper
1/2 yellow onion chopped
1 yellow onion thinly sliced

Directions:
Spray crockpot with cooking spray. Put in frozen chicken. Mix salsa and fajita seasoning in separate bowl. Pour over top of chicken. Add the chopped onions into the crockpot. Cook on high 6 hours or low for 10 hours. Once finished cooking, take chicken out and shred. Once shredded put the chicken back in the sauce in the crockpot until ready to serve. Cut and saute peppers and onion. (You can add these in at the beginning in the crockpot...I just like mine a little crisper.) Serve with toppings of your choice...sour cream, guacamole, fresh salsa, lettuce, cheese, spanish rice, etc. Serve wrapped in tortillas.

Corn Salsa

Ingredients:
1 can black beans, drained
4 green onions, chopped
1 green pepper, chopped
1 can corn, drained
5 Roma tomatoes or 3 regular tomatoes, chopped
1/2 bunch cilantro, chopped
1 Tbsp Cumin
1 bottle of Italian dressing

Directions:
In a bowl combine all ingredients but Italian dressing and cumin. Once all mixed together add Italian dressing until to desired consistency (I use about 3/4 of the bottle). Then add in cumin and mix all together. Serve with tortilla chips. Also good on top of green salad.

Kenny's Favorite Key Lime Pie - Kenny Chesney that is...

Kenny Chesney's Favorite Key Lime Pie

I got this recipe out off one of mu Friend's blog's Thanks Aubrey!

Kenny's Favorite Key Lime Pie
Serves 8
Crust: (or you can cheat and buy a pre-made on at the store)
1 1/2 C graham cracker crumbs
1/4 C sugar
5 T unsalted butter, melted

Preheat oven to 325*
In a medium bowl combine the graham cracker crumbs and sugar.
Add the butter, stir w/a fork until blended.
Transfer to a 9" deep pie pan and press crumbs into the sides, then bottom of pan. Then press again with the bottom of a measuring cup to ensure a firm crust.
Bake on center rack in oven for about 15 min. or until golden brown.
Let cool to room temperature.

Pie Filling:
4 egg yolks
1 can (14 oz) sweetened condensed milk (NOT evaporated!)
1/2 C fresh lime juice (2-3 limes)
2 t grated lime zest.
1 8 oz container whipped topping
Lime slices for garnish

1.Place the egg yolks, milk, lime juice, and lime zest in a medium bowl, and mix on high speed for about 3 minutes, or until thick.
2. Pour the filling into crust and bake for 15 min on 325* or until center is set, but still jiggles when shaken.
3. Let cool to room temperature.
4. Cover with whipped topping and lime slices to garnish.
5. Refrigerate for at least 3 hours or until well chilled.

Enjoy! It was quite a hit at the dinner I made it for! Hope it is at yours too!

p.s. To make lime zest I just grate it using a small-holed cheese grater. Nothing fancy-schmancy here!
